For most domestic homebrewing enthusiasts, we can only buy two kinds of hop pellets and hop dried flowers. So which of these two forms of hops is better?
Dried hops
advantage
More natural, prepared only by drying, retaining more hop flavor.
The flower body is fluffy and has good adsorption. During the boiling process, part of the "hot coagulation" in the wort can be absorbed, making the wort clearer and the taste more pure.
Dry casting effect is good. Because the hops are complete, they will not sink, and can be easily discharged after dry casting, without affecting the wine body and making it cloudy.
shortcoming
Dried flowers are fluffy and have a large contact area with the air, which is easily oxidized and leads to a decrease in quality.
During the boiling process, not only the thermal coagulation in the wort will be absorbed, but also a large amount of wort will be absorbed, which will affect the recovery rate of the wort.
The hops will not sink, so it is difficult for the entire hops to be completely immersed in the wort, and because the hops are intact and not damaged, the alpha acid dissimilation in the hop gland is also more difficult, resulting in a very low utilization rate of dried flowers, only about 10% .
Hop particles
advantage
Due to its small size, it not only effectively reduces the contact area with air, inhibits oxidation reaction, but also greatly saves storage space and transportation costs.
After being put into the wort, it will be dissolved and broken, and the contact area with the wort will be greatly increased. In addition, the hop gland of the hop particles has been damaged, the dissimilation process of alpha acid will be easier, and the bitterness will increase significantly. Therefore, the utilization rate of hop particles is better than that of dried hops, generally around 15%.
shortcoming
The crushing stage will cause the loss of flavor substances, and the hop gland will be in contact with the air immediately to cause an oxidation reaction.
The hop particles dissolved in the wort will gradually precipitate and form a slurry, which affects the collection of the wort before fermentation; in addition, the hop particles may precipitate before the dead yeast during the dry casting process, and the dead yeast covering the hops will greatly affect the dry casting effect. .
Summarize
The utilization rate of hop particles is slightly higher than that of dried flowers (when brewing in small batches, the difference in flavor and cost will not be very large), and the volume is small and easy to store; when hops are dry, dried flowers are easier to filter. But whether it is hop pellets or dried hops, the most important principle is the freshness of hops.
